Father’s Day Sandwich Recipes

HERO SANDWICH
INGREDIENTS
1 cup mayonnaise
2 Tbsp red wine vinegar
2 tsp dried Italian seasoning
1 dash garlic powder
4 drops Tabasco sauce
12 slices white bread
1 pound assorted deli turkey, deli roast beef or deli ham
sliced Swiss cheese
softened butter
1 Tbsp honey dijon mustard
lettuce leaf
thinly sliced pickle
sliced pimento stuffed olives
sliced tomato
DIRECTIONS
Combine the mayonnaise, red wine vinegar, Italian seasoning, garlic powder and Tabasco sauce.
Butter the slices of bread. This acts as a seal to prevent the sandwich from getting soggy, and it tastes good, too!
Spread the bottom slice of bread with mustard.
Layer the deli meats, cheese, lettuce, pickles, olives and tomatoes evenly amongst the bread.
Season the tomatoes lightly with salt and freshly ground pepper.
Spread the mayonnaise mixture over the top of the sandwich.
Cut the sandwiches into diagonal pieces.
PESTO CHICKEN SALAD SANDWICHES
INGREDIENTS
1/2 cup low-fat mayonnaise
1/3 cup plain fat-free yogurt
1/3 cup pesto sauce (store bought)
1-½ Tbsp lemon juice
1/2 tsp salt
1/2 tsp black pepper
4 cups cubed rotisserie-cooked boneless skinless chicken breasts
1 cup diced celery
walnuts, to your taste
20 slices of white bread
12-ounce bottle of roasted red peppers, drained and chopped
10 Romaine lettuce leaves
DIRECTIONS
Combine the first six ingredients in a large bowl, stirring with a whisk. Stir in the chicken, celery and walnuts.
Spread a 1/2 cup of the chicken salad onto each of 10 bread slices. Top each serving with about 2 tablespoons of roasted red peppers, one lettuce leaf and one bread slice.
